Bakewell Pudding

My Friend Gruff Brings a Treat!



I've had a lovely weekend so far. My friend Gruff came to stay. He lives on a farm in Derbyshire and brought with him a real Derbyshire treat; Bakewell pudding!

 
Gruff also said that he would share the recipe so that you can have a try!

Gruff's Bakewell Pudding

Ingredients:

  • 1 block of puff pastry (Gruff and I choose to buy ours from the shop rather than make our own. Puff pastry is very tricky to make, especially when you have paws!)
  • 1 jar of jam
  • 6oz ground almonds
  • 6oz Demerera sugar
  • 6 eggs
  • 6oz melted butter

Method:


  1. Preheat the oven to 180C. 
  2. Roll out the puff pastry and use it to line a large baking tin.
  3. Scoop the jam into the baking tin and spread it evenly over the pastry.
  4. Tip the almonds and sugar into a large mixing bowl and stir.
  5. Now add the eggs and stir until everything is combined.
  6. Add the melted butter and stir. Pour this mixture over the jam and pastry.
  7. Put the pudding into the oven and bake until it's golden brown on top and is set in the middle.
  8. Serve with cream, custard or ice cream. Yummy!
